Meeting new people, introducing yourself in a group, I’m sure you’ve been asked “what’s your favourite food?” While everyone one else lists common foods like pizza, ice cream, pasta etc… I’m the one that declares “FRUIT.” I often get odd looks from others as I smile awkwardly knowing people think I’m weird for touting a healthy option, I don’t blame them, I would too. But I don’t say fruit because I don’t ever eat less healthy foods, heck I love chocolate, banana bread…hand over the popcorn! – its just that fruit is my favourite!
Naturally I’m one to crave sweet things and fruit is a perfect stand in! Luckily for me fruits have many essential nutrients including potassium, dietary fiber, antioxidant vitamin C, folate and water. Not only do they promote radiant skin, healthy hair and nails but are needed for long vital lives :
-potassium can help maintain healthy blood pressure
-fibre helps lower cholesterol and keeps the gut full and happy
-vitamin C is important for growth and repair, helps heal cuts and wounds, and keeps teeth and gums strong
-folate helps the body form red blood cells
Fruit are lower in calories versus the other treats I could be eating and a natural source of carbohydrates – an energy providing nutrient – making them an amazing option as a pre-workout snack! For those who are troubled with blood sugar levels or if you’re wanting to have a longer sustained source of energy (like mid-afternoon), include a healthy protein or fat with your fruit such nuts, nut butters or avocado! This helps slow down the digestion and helps decrease blood sugar spikes and keep us full longer.
Now that we’re almost into summer we are getting such a great assortment of flavourful fruit and that has me doing a happy dance! Doesn’t seeing the bright colours of fruit just stimulate your system and make you smile? Or maybe that’s just me…
Yesterday I made this fruit pizza and I was so happy with the flavours and it definitely helped brighten up a gloomy day! The crust and creamy layer are both gluten free and vegan, have a great source of healthy fats, heart healthy proteins, and are rich in beauty antioxidant Vitamin E! A great alternative as a beauty food dessert ♥
Fruit Pizza with Nutty Crust and Avo-Matcha Topping
gf, vegan, peanut-free option
1/2 cup raw sunflower seeds
1/2 cup raw almonds
1 cup oats (I use Only Oats)
1 cup dates, pitted
1/3 cup natural peanut or almond butter
1/4 tsp cardamon
1/4 tsp cinnamon
In a food processor or blender, pulse seeds, nuts and oats together into a meal. Add dates, nutbutter, and spices and process until a loose dough forms. Press mixture into pie pan prepared with coconut oil, place in fridge to set.
For the Creamy Avo-Matcha Topping:
3/4 cup cashews (pre-soaked in water overnight, and drained)
2 Tbsp coconut oil
2 Tbsp water
1-2 Tbsp almond milk
2 Tbsp maple syrup
juice of 1 key lime or of 1/2 large lime
1/4 tsp matcha powder
small pinch of sea salt
Add all ingredients into food processor or blender, and process until consistency similar to a cream cheese frosting.
To Build the Pizza:
1. Spread the creamy topping over the nutty crust base.
2. Clean and prepare an assortment of fresh fruit – Some examples: strawberries, kiwi, raspberries, blueberries, grapes, mango, peaches, blackberries
3. Place fruit on crust and topping in whatever fashion you like!
4. Keep in fridge until serving.
