Finally, finally we are into spring! I’ve been craving some warmth and sunshine pretty much since the first day it snowed… This year I didn’t really get the winter blues like I’ve experienced in the past which I attribute to keeping busy doing things I love (you can read more about that here), but I’ve definitely have been wishing for spring and summer to come back!
I feel like I say this each time, but this past week has been very busy. And looking forward, the week coming up isn’t holding back. With these busy go go go schedules, it is very important I stay on track with healthy eating and having meals and snacks prepared that fit within my beauty eating regime. The other night I made a big pot of bean and veggie soup from random ingredients I had to use up in my fridge, which I now have frozen and ready to pack into my lunches. I also made up these delicious cauliflower falafels which I have been eating in a buddha bowl full of sprouts, greens, beet hummus and more veggies! So satisfying and tastes like spring 🙂
