One of my all time favourite snuggling up on the couch and watching a movie treat is the classic popcorn. You can’t go wrong with popcorn really…well unless you burn it, or if you struggle with getting kernel skins stuck in your teeth or even worse, on the back of your tongue! Has that ever happened to you? It’s horrible! But besides that, I love popcorn. And popcorn can be a healthy treat depending on how you pop it (choose airpopped), what you put on it (control the amount of sugar, salt and fat), and of course, how much you eat of it (small single sized bowl vs family sized bowl). If sty wihtin these parameters, you got yourself a quick, high fibre, gluten free snack!
I decided to kick up the old-fashioned popcorn and add a fruity twist to it – perfect for summer and has some added beautifying antioxidants!
Sweet and Savoury Strawberry Popcorn
1/4 unpopped popcorn kernels, airpopped
1/2 tsp sea salt
1-2 tsp strawberry powder*
1 Tbsp vegan butter, melted
*For the Strawberry Powder (requires prep)
1 lb fresh strawberries, washed
1. Heat oven to lowest heat (150-200°F).
2. Slice strawberries into very thin slices, and place onto parchment paper lined baking sheets.
3. Bake in oven for around 3-4 hours or until the strawberries are dry.
5. Remove from oven and let cool. Once cooled, add strawberries to blender or processer and process into fine powder. Store unused powder in freezer.
