Wow this week flew by! I can’t believe it’s Friday already- not like I have anything special planned for the weekend since I am working! Thursdays are more like a weekend day for me, where I have time to catch up on things, do some errands…should be doing some cleaning as well but I tend to keep busy so I don’t have to clean- like working on my blog, taking photos and making great food!
I did try to do some shopping yesterday since my closet desperately needs a refresh. I made it to one store but I didn’t really know what I was looking for so I ended up empty handed. I think I need a personal stylist!Instead of trying out different stores, I threw in the towel and went back home to the kitchen. At least I was able to create something beautiful in there!
Instead of a new outfit I came out with a yummy layered Strawberry Vanilla Chia Pudding for a delightful afternoon snack…and leftovers for breakfast today!
The strawberries give a healthy source of energy from their natural carbohydrates, which is sustained by their fibre content! They also have a rich source of anti-aging Vitamin C (check out my post about this beauty nutrient here)! While the chia seeds provide protein and extra fibre to balance out the natural blood sugar rise and keep me full longer! (I have a post about chia seeds too, check it here!).
I’m just writing this on my lunch break, so I’m going to wrap up and get outside for some fresh air before being stuck in the office for the rest of the afternoon!
Oh yah! Here’s the recipe for the chia pudding! Almost took off without sharing that with you! Happy Earth Day and have a beautiful weekend!
Strawberry Vanilla Chia Pudding
For strawberry layer:
1 1/4 cups fresh strawberries
1/2 cup unsweetened vanilla almond milk
1/4 tsp pure vanilla extract
6 Tbsp Chia Seeds
1 tsp shredded or flaked coconut
1 Tbsp granular stevia (optional)
Add banana, strawberries, almond milk, vanilla, 3 Tbsp of the chia seeds, and coconut into a blender.
Blend until completely combined. Transfer to bowl and mix in the rest of the chia. Cover and refrigerate overnight.
For vanilla layer:
1 cup unsweetened vanilla almond milk
4 Tbsp chia seeds
1 1/2 Tbsp stevia or sweetener of choice
1/2 tsp pure vanilla extract
C\ ombine all the ingredients in a bowl or jar, mix, and cover. Refrigerate overnight
Divide and assemble the layers among bowls to your liking! Top with fresh strawberries and coconut flakes!
