Hey friends! Who else needed another day added to this weekend?? I could definitely use one! I was up for early morning makeups on Saturday, meaning I only got 4 hours of sleep Friday night which is definitely not up to par with my much needed 8 hours! Then we had a little scare last night with a sick pup that had us up and heading to the vet at 4am. So yah, no sleep last night. But don’t worry Riah is fine now – maybe just ate something bad!? Wish I could say I was able to sleep Sunday away to try and catch up but my inability to waste a day had me doing makeup, going for a run, and whipping up these super yummy Beet & Carrot Patties!
The beets and the carrots in these patties are rich in beauty nutrients Vitamin C and fibre! So not only do they taste good, they are super healthy and perfect for a diet promoting radiance from the inside out. I kept it a lighter meal and used green leaf lettuce as the “bun” but you can def use these in a nice grainy bun.
Now that I’ve been sitting down the exhaustion has caught up to me so I’m going to cut to the chase tonight and get straight to the recipe! Enjoy! 🙂
Beet & Carrot Patties
gf, lacto-ovo vegetarian, high fibre
2 cups grated raw beets (cleaned and peeled)
1 cup grated raw carrots (cleaned and peeled)
1 small yellow onion, chopped
2 cloves garlic, minced
100g light goat cheese
1/2 cup fresh basil, chopped
1 1/4 cups gluten free rolled oats
1 Tbsp coconut flour
1 Tbsp almond meal flour
salt and pepper to taste
1. Add grated beets, carrots, onion, and garlic into a large mixing bowl. Mix in eggs, goat cheese, basil, oats, coconut flour, almond flour and salt and pepper.
2. Let mixture sit for 30 minutes to allow for extra liquid to be absorbed.
3. Heat 2 tsps coconut oil (or other vegetable oil) in large skillet or frying pan. Form mixture into 8 patties with hands and fry on each side for 5 minutes or until golden brown. *If you decide to grill on BBQ, make sure you lay down tin foil first or else you’ll lose your patties through the grill rack!
Place patty into a whole grain crusty bun or between green lettuce leafs. Top with hummus, roasted sweet bell peppers and sprouts!
