It’s official – hello fall! Leaves are starting to drop, and we all turn into basic bitches, even if you don’t want to admit it, with pumpkin flavoured everything and oversized sweaters. I’m not one for sugary lattes but I do end up with an unnecessary number of pumpkin scented candles!
One of my favourite things about fall is the fresh harvest of vegetables from the garden that make warming meals a lot more comforting. I’ve been cooking up some fresh vegan soups with the vegetables that I picked up from my mother’s garden and the farmer’s market.
Fall is also such a nice time to spend with family, take the pup for a walk with the crisp refreshing air and redirect focus and motivation into attaining planned goals. What do I have on my schedule? Well lots ….working at the hospital and being a preceptor for the new wave of Nutrition students, taking on private nutrition clients, business planning, working on updates to this site, as well as working on my own personal fitness. With so much on the go (my typical life), I’m determined to keep my eating on track and have healthy meals on hand when I’m running from work to exercise to more work. Yesterday I had one fail in food making, but I also had one major success. The fail was a raw carrot soup I randomly threw together, which ended up tasting like cold pureed watery carrots. Yuck! That went down the toilet…. The major success was this tomato soup. It is packed with antioxidants – carotenoids such as lycopene, Vitamin C and Vitamin A – that fits perfectly into my beauty food routine and tastes amazing. Enjoy!
