Did you ever have growing up one particular meal that your parents made often but you weren’t a fan of?? I did! Well actually I was a very “picky” eater as a kid, so there were many more than just one! I can, however, specifically remember really disliking potato pancake suppers…. and having to load them with jam to be able to eat them. My parents were a fan of them, my brother and sister seemed to have no problem eating them, but me, not so much!
Maybe it was the potato I didn’t like? I dunno, I didn’t seem to mind hashbrowns… I can’t always say that I know what I was thinking! I did decide to try an alternative to a potato and made these absolutely delicious cauliflower pancakes!
Cauliflower, although not a colourful vegetable, are super healthy and versatile to use! They are low and calories and carbs (if that matters to you), high in fibre, and high in antioxidants that protect your youthful looks and phytonutrients that protect your health! And no I didn’t buy an $8 cauliflower. Luckily these babies came down to a more reasonable price!
1 head raw cauliflower, grated
1 teaspoon salt
½ cup almond flour
½ cup grated parmesan cheese
½ teaspoon baking soda
1/2 medium sweet yellow onion, chopped
1½ teaspoons lemon pepper
1 Tbsp coconut oil
1. Grate the cauliflower and put it into a colander, sprinkle the salt on top and mix thoroughly with your hands. Let the cauliflower sit for 10 minutes.
2. Meanwhile, chop the onions and place them into a medium bowl. Squeeze the water out of the cauliflower in cheese cloth or with your hands.Add cauliflower with the onions. Add the almond flour, cheese, baking soda and seasoning. Mix thoroughly. Add the eggs and mix until incorporated. Add more almond flour if too liquid.
3. Add coconut oil to hot frying pan.Scoop out cauliflower batter and place into the hot skillet. Push down gently to flatten pancake. Cook until golden on each side. Once cooked, place on paper towels to absorb excess oil.
Per 2 pancakes: 138 calories, 9 g fat, 7 g carbs, 9 g protein, 3 g fibre
