It’s been looking a little gray outside in Regina, Saskatchewan (for those of you that may not know, it’s in Canada!)… so I thought I’d brighten up my mood and my lunch with some chilled soups! These feel good beautifying soups are vegetarian, gluten free, full of fibre, antioxidants (vitamin C and E) and are super yummy! Raw soups are a great way to get in all of these radiance boosting nutrients!
Just seeing the brightness of this soup made me smile! My favourite is a Raw Strawberry Soup, not only because pink is my favourite colour, but it was so absolutely delicious! I also made a Cucumber Avo Soup which was tasty too, but I feel I want to play around with the recipe a little more! So for today here is the recipe for the pink little number…
Raw Strawberry Soup
1 lb fresh strawberries
1/3 cup (74g) raw unsalted cashews
1 cup coconut water
1 1/2 tsps honey
2 1/4 tsps strawberry powder (I made my own from dehydrating strawberries and blending into powder)
pinch sea salt
- Put cashews and coconut water in a food processor or high speed blender. Pulse eight to ten times until cashew pieces are about the size of coarse grains of sand. Let cashews soak at room temperature for an hour.
- After the cashews have soaked, blend again until the mixture looks like a cream. Add strawberries, honey, strawberry powder and salt to food processor and process until smooth. Add more coconut water if needed to get soup consistency you like!
- Refrigerate until cold (about an hour).
